Almond pastries are traditional Sicilian pastry biscuits. In this traditional version they are made with Sicilian almonds that are minced and mixed with sugar to create a tasty, soft and fragrant biscuit.
Almond paste in Sicily is recognized as one of the traditional agri-food products (PAT) of the Ministry of Agriculture, Food and Forestry. Its origin seems to date back to a preparation by the Arab populations who used to mince together foods based on cane sugar, spices and dried fruit. By mixing sugar and ground almonds, they would have given shape to the first recipe of almond paste and then brought them to Sicily. A more patriotic version, on the other hand, assigns the first recipe to the Martorana convent in Palermo in the distant 1100. Whether they are Arab or Palermo, almond pastries cannot be missing on the tables as a dessert after a meal.
